Pizza Commissary Facility


Members of our Food & Beverage team provided architectural and engineering for a facility in Shanghai to prove out a concept for the centralized production of pizza components. This company had been producing all their pizza dough and components at each of their hundreds of restaurants within the Shanghai metropolitan area. The new centralized facility allowed this company to reduce costs, improve quality and redevelop process areas within the restaurants for other uses. The production rate for this 20,000-sq-ft facility is 4 million dough balls per year. The facility includes storage areas, process areas including dough mixing and extrusion, cold hold and fermentation, employee areas and tray cleaning rooms. This commissary template began production in October of 2006. In 2008 our team began work on a model for centralized commissary for the company's facilities world wide. This template design included plans, construction detailing appropriate for challenging construction environments and process information for purchase of food equipment. The design included spreadsheets for insertion of production volumes with calculations on equipment requirements as the output. The commissary template started implementation in 2009.
