School Commissary Facility

This company provides meals for a citywide school system. Members of our Food & Beverage team provided architectural and engineering services for a new 40,000 sq-ft commissary that provides 12,000 meals per day, with growth potential to over 25,000 meals per day. The original objective was to improve the existing facility, but an analysis of costs determined that a new facility would be a better investment. The new design optimized storage and delivery of incoming goods, increased health and safety protocols, improved internal product distribution, increased the efficiency of production lines and created the ability to manage peaks in staffing. The facility incorporates the latest design features such as the creation of an interstitial mechanical space over the main production room. Refrigerated air is filtered to increase food safety. Materials are designed for long use and low maintenance.
